Northbound Coffee Roasters recently brought us
their seasonal dark roast, Trimmer’s Delight. This single-origin coffee is
comprised of a naturally processed Ethiopian Yirgacheffe and makes a cup that
is bold and rich with hints of dark chocolate.
The seasonal dark roasts offered by Northbound,
Trimmer’s Delight and Happy Camper, are made with one kind of bean
(single-origin). Trimmer’s Delight is available October through March and
Happy Camper is available April through September.
“We just keep finding really nice individual
coffees that taste really good at that darker roast profile,” Keith Hamrick of
Northbound shared with us.
This fall, the beans from Trimmer’s Delight are
sourced from Halo Bariti, one of the newest cooperatives in Ethiopia,
where this indigenous, heirloom variety is grown above 5,200 feet in elevation.
The 225 farmers who contribute to the cooperative grow in a remote, undeveloped
area of Ethiopia.
For this naturally processed bean, the ripe, red
cherry is delivered by co-op members to their drying tables, where it is then
hand sorted and raked for even drying over the course of 10-15 days.
Keith told us that this natural process makes for a
heavy bodied and fruity coffee, especially with a dark roast where it is caramelized
to bring out the notes of chocolate and blackberry.
